Cheesecake and blackberries

With only 111 kcal per serving , this fit cheesecake recipe prepares the classic baked cheesecake with certain differences in its ingredients to make it lighter and healthier.

You can use low-fat cream cheese and replace the milk of animal origin with a vegetable drink, which is much lighter and easier to digest.

We also avoid sugar and use a natural sweetener like Stevia (or another one you like). It's as simple as mixing all the ingredients, adding the red fruits of your choice, and into the oven!

Ingredients

  • 200 grams of low-calorie cream cheese
  • 150 grams of blackberries (or strawberries, raspberries, blueberries...)
  • 4 eggs
  • 40 milliliters of milk or vegetable drink
  • 1 teaspoon Stevia or sweetener
  • 1 teaspoon vanilla extract
  • 1 fresh mint leaf (to decorate )

Elaboration

Add the cream cheese and milk or vegetable milk to a bowl. Beat with a whisk.

In another bowl, add the eggs and sweetener. Beat and add the vanilla extract. Continue beating, add the cream cheese mixture and stir with a spatula.

Line the base of a springform pan with baking paper. Pour the mixture into the pan and arrange the blackberries.

Place in the oven preheated to 170ºC for about 35 minutes, until done.

Remove from the oven, allow to cool and carefully unmold.

Serve the fit cheesecake with red berries. Decorate with a fresh mint leaf and some more berries.

Peaches with Cheese and Walnuts

Perfect for surprising with a completely different recipe, we love these peaches with fresh cheese and honey both to enjoy for breakfast, and to serve as a very summery dessert.

The trick to this recipe is to lightly brown the peaches on the grill , which gives it a surprisingly delicious touch. We accompany it with fresh cheese, a little honey and walnuts! It's a combination that works very well in its simplicity.

As always, if you want to make it even lighter and healthier, we recommend removing the cheese from the dessert, as it is the one that adds the most fat and calories to the recipe. With the honey to sweeten it and the walnuts, we assure you that it is also delicious! You can also try replacing the fresh cheese with natural yogurt , which will add that fresh touch that goes so well with this fruit.

Cut the peaches in half and remove the pits . Then drizzle each peach with a little oil and sprinkle with cinnamon.

Add the peaches face down to a pan to grill them. When they begin to brown, remove from the heat and allow to cool .

Add a little fresh cheese in the hollow of each peach and half a walnut on top.
